I’ve been wanting to make whoopie pies for a while now, as evident by one of my Pinterest boards.

I told you this whole Pinterest thing would be a problem. Anyway, I thought…”hmmmm, let me try might be easier that I think!” And guess what?

…… It was! 

My kids enjoyed them, so they are definitely kiddo approved!

This is the best combo for a woopie pie the cake mix made it close to perfection! The perfect amount of fluffiness! and taste.

In the summer time I crave lemony desserts. As soon as the sun is out and shining, I want to make all things bright and lemony. And these lemon poppy seed cookies are the perfection.

These sugar cookies have lemon essential oil  for lots of lemon flavor. The poppy seed completes it with the little specs.

For these you can use a few different name brands for the oil just make sure it a grade that is safe to ingest.

These cookies get a little thick in the oven as they bake, but then flatten out as they cool. When I took these out of the oven the lemon smell was so strong it was fabulous. The 1st bite? to-die-for so much lemon in one cookie with the perfect texture!

  Ya’ll my kids were so excited about these it was worth it all!! So fun and so easy!! Perfect for all occasions in my case I served them before breakfast & they thought I was super cool!! Perfect for baby showers, gender reveal, birthdays and all in-between party’s!!

What You Need:

• Marshmallows or Marshmallow Fluff (I used fluff only this time)
• Cotton Candy
• Graham Crackers
• Sprinkles

How to Create:

1. Get a spoon and place fluff on bottom cracker.
2. Add sprinkles.
3. Place a good bit of cotton candy on top of sprinkles.
4. Add a bit more fluff just 1/2 spoonful and top with cracker!!

SO EASY & WITH A HUGE WOW FACTOR!

What You Need:

• 2 cups white or yellow cake mix
• 2 cups powdered sugar
• 1 stick of butter
• ¼ cup heavy whipping cream
• 1 bag of white chocolate chips
• ½ cup sprinkles, divided

How To Create:

1. Spray or line an 8×8 baking pan. Set aside.
2. Mix your cake mix and powdered sugar in a medium mixing bowl.
3. Add your cream and butter and microwave for 90 seconds, or until butter is completely melted.
4. Add in your chips and ½ of your sprinkles. Mix gently. Pour mixture into your baking pan.
5. Top with remaining sprinkles. Refrigerate for 2-3 hours or until very firm. Remove from baking pan and cut into squares. Keep refrigerated until ready to serve.

What You Need:

• 3 cups sugar
• 1-12 oz can Evaporated Milk
• 1/4 cup butter
• 1/2 teaspoon salt
• 4 cups marshmallows (or 1 jar marshmallow spread)
• 2 teaspoons vanilla extract
• 4 cups chocolate (chips or squares)
• 1 package M&M’s® Coffee Nut
• 1/2 cup white chocolate (chips or squares)
• 1 Tablespoon shortening

How To Create:

1. Line a baking tray with tinfoil or parchment paper.
2. Combine sugar, evaporated milk, butter and salt in pot over medium heat.
3. Bring to a full rolling boil, stirring constantly for 4 to 5 minutes.
4. Remove from heat.
5. Stir in marshmallows, chocolate chips, and vanilla extract. Stir well until marshmallows are melted. Pour into prepared baking tray & arrange M&M’s® Coffee Nut
6. Melt the white chocolate along with the shortening in a small bowl in the microwave, heating for 20 second bursts and stirring thoroughly in between each heating. When thin and syrupy, drizzle the white chocolate over the M&M’s® Coffee Nut Fudge.

Refrigerate for 2 hours or until firm, then cut into squares.

Note: you can drizzle the white chocolate on the fudge before or after refrigerating.

This creation was fun and so easy! I took what was left to my office co-workers and they LOVED it!!

What You Need:

** This will make 2 dozen bombs.

24 maraschino cherries with stems

Betty Crocker vanilla cookie icing in a squeeze pouch

1/4 cup Wilton Royal blue chocolate melts

1/4 cup Wilton light blue chocolate melts

Red, white and blue sprinkles (jimmies and nonpareils)

Need I say more? no not really but I will… Cherry and Coconut Yes Yes & Yes! These are so fun and easy to make and will be your new go to summer treat. By now you know I love easy and unique. Have fun with this enjoy!

What You Need:

3/4 cup all purpose flour
6 cups shredded sweetened coconut
1 Tablespoon vanilla extract
1 teaspoon almond extract
1 (14 oz) can sweetened condensed milk
1 cup Wilton Royal blue chocolate melts
1 jar maraschino cherries – drained and patted dry

How To Create:

1.  Preheat oven to 350°. Line a cookie sheet with parchment paper and set aside.
2.  In a large mixing bowl, add the flour and coconut. Stir until well mixed.
3.  Add both extracts and stir again until well blended.
4.  Add the sweetened condensed milk and with a rubber spatula, mix well to incorporate.
5.  Drop 2 inch rounded, heaping spoonfuls onto the cookie sheet, spacing the cookies about 2 inches apart.
6.  Spray the bottom of a drinking glass with non stick spray and use it to flatten the cookies ever so slightly.
7.  Bake for 12-15 minutes or until golden in color and the coconut is lightly toasted.
8.  Cool on the cookie sheet for 5 minutes before transferring to a wire rack to completely cool.
9.  Line a cookie sheet with wax paper and set aside.
9.  In a double boiler, melt the blue chocolate candies by stirring until completely melted.
10.  Pour the melted chocolate into a shallow dish and dip the bottom of each cookie into the mixture. Place on the cookie sheet to allow the chocolate to harden.
11.  Using your index finger, gently press down into the center of each cookie. Dab a small amount of melted chocolate onto the bottom of each cherry and place into the hallowed center.
