I really love making fun and easy cupcake recipes. These cookies and cream cupcakes are one of those super easy recipes that I can make, enjoy and make again anytime.
Plus, you know, kids think that cupcakes are somehow more of a treat than just having a plain cookie. So, this is a fun way for you to have a “fancy” dessert for a party or playdate that’s really just cookies and cupcakes coming together really quick.
And even though I used canned frosting, if you’re into making your own buttercream, you can certainly do that. It just adds about 10 minutes to my overall baking experience and sometimes I’m just not into it.
It’s nice having a recipe using canned frosting sometimes, when you can just bang-out the cupcakes and not worry about anything more than just the cupcake batter. Right?!

What You Need to Make this Cookies and Cream Cupcakes Recipe
This is a very simple cupcake recipe that’s no-fail. Seriously, anyone can make these–and the eggs, oh, that’s right, no eggs. So no worrying about whether they’re still good or if they’ve gone flat…you just make the cupcakes and they’ll work. Here’s what you need:
- 2 1/2 cup flour
- 1 cup granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons vanilla
- 1 cup water
- 1/2 cup butter, softened
- 1 can of your favorite vanilla frosting
- 1/4 cup cocoa powder
- 1 cup crushed OREO cookies
How to Make these OREO Cookie Cupcakes
Step 1
To make the cupcakes, preheat oven to 350-degrees then combine dry ingredients in a medium sized bowl.
Step 2
Combine wet ingredients (including butter) in a second medium sized bowl.
Step 3
Add dry ingredients to wet ingredients in ⅓ increments, mixing thoroughly between each increment and spoon into lined cupcake pan.
Step 4
Bake for 30-minutes or until inserted toothpick comes out clean. Cool cupcakes completely before decorating.
Step 5
With your largest decorating tip, press into the top of the cupcake off-center, creating a well. Save hole tops.
Step 6
Place 1 tablespoon of crushed cookies into each cupcake well. Replace hole top on each cupcake.
Step 7
Place frosting in a decorating bag, and swirl onto cupcakes.
Step 8
Top each cupcake with more crushed cookies.

Cookies and Cream Cupcakes
Ingredients
- 2 1/2 cup flour
- 1 cup granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons vanilla

- 1 can of your favorite vanilla frosting

Instructions
- Preheat oven to 350 degrees.
- Combine flour, sugar, baking soda, and salt in a medium bowl.
- In a separate bowl, cream together vanilla, water, and butter.
- Slowly add dry ingredients to wet ingredients, mixing between each addition.
- Spoon batter into lined cupcake pan.
- Bake for 30 minutes or until toothpick comes out clean. Cool completely.
- Use a large decorating tip to create a well in the center of each cupcake. Reserve the pieces.
- Add one tablespoon of crushed Oreo cookies into each well. Replace the plug in each well.
- Place prepared frosting in a decorating bag. Frost each cupcake swirling from the outer edge to the center.
- Top each cupcake with additional crushed cookies.
