When I decided to make these Minnie Mouse Cupcakes, I didn’t realize just how simple they’d be! Easy, fun and definitely tasty–they’re everything a Disney cupcake should be. And the best part is that the kids could absolutely help make these cupcakes.
Not only is the recipe no-fail (I mean, it doesn’t even require eggs, it’s so simple), but the decorations are absolutely something the kids can put on. They’ll love it!
Plus, they’ll love the cupcakes. I mean, who doesn’t love a little marshmallow-topped treat with a tiny bit of candy action?! It’s definitely a winning cupcake recipe for sure.
What You Need to Make this Minnie Mouse Cupcakes Recipe
So, what do you need for these no-fail cupcakes? Well, really it’s just a handful of basic ingredients.
- 2 1/2 cup flour
- 1 cup granulated sugar
- 1 tspn baking soda
- 1/2 tspn salt
- 2 tspn vanilla
- 1/3 cup butter
- 1 cup water
- 1 can of your favorite vanilla frosting
- 2 cups marshmallow fondant or white modeling chocolate
- 10-12 drops black food coloring
- 5-10 drops red food coloring
- 6 pink Starburst candies
- Red sanding sugar
How to Make this Minnie Mouse Cupcakes Recipe
Step 1
To make the cupcakes, preheat oven to 350-degrees then combine dry ingredients in a medium sized bowl.
Step 2
Combine wet ingredients (including butter) in a second medium sized bowl.
Step 3
Add dry ingredients to wet ingredients in ⅓ increments, mixing thoroughly between each increment then spoon into lined cupcake pan.
Step 4
Bake for 30-minutes or until a toothpick comes out clean. Cool cupcakes completely before decorating.
Step 5
With your largest decorating tip, press into the top of the cupcake off-center, creating a well. Save hole tops.
Step 6
Place 1 tablespoon of sanding sugar sprinkles inside the well in the cupcake. Replace hole top on each cupcake.
Step 7
Mix red food coloring into your vanilla frosting, stirring until the color is consistent.
Step 8
Place large hole tip in piping bag and fill with frosting. Frost each cupcake in a single layer swirl, turning the piping bag as you pipe.
Step 9
With 10-15 drops of black GEL food coloring, work that into the marshmallow fondant. This needs to be black, so if you need more food coloring, add more. If the fondant feels too wet, put it in the freezer for 10 minutes.
Step 10
Roll out black fondant on parchment paper to about 1/8-1/4 inch thick and, with mouse head cookie cutter cut out 12 mouse heads.
Step 11
Place one mouse head of black fondant on top of each cupcake.
Step 12
Unwrap Starburst candies. Working with one Starburst at a time, microwave them for 5 seconds.
Step 13
Break the warm Starburst candy in half. Work 1/2 of the candy into a short, fat cylinder about 1/2 inch long.
Step 14
Mash the center to be more narrow and fan out the ends to be more, well, fan-shaped.
Step 15
With your thumbnail or a thin spoon, press into the Starburst bow shape some relief on the bow-sides and the center tie area.
Step 16
Place bow on mouse head on cupcake.
Step 17
Repeat for all mouse heads.
