Mini Taco Cups.

When I see any mini food creation it excites me & gives me the vibe of a special treat. These Taco Cups are mini but have the full flavor of a huge Taco Salad. Maybe it’s just me maybe not but I love creating and serving anything in mini portions and mix matching with different things. Especially when it’s easy and these Mini Taco Cups fit that just right! My kids and husband love these so it’s a win-win for me and of course that means I make them a lot. Enjoy!!

 Mini Taco Cups

 What You Need:

1 package soft tortillas

1-pound ground turkey or lean ground beef

¼ – ½ cup diced onion

¼ – ½ cup diced garlic

1 envelope of taco seasonings

1 can sweet corn, drained

1 can black beans, drained and rinsed

½ each; red, green and yellow bell pepper, diced

½ cup diced tomatoes (I use grape or cherry)

1 avocado, diced

1 tbsp. sea salt

How To Create:

Preheat oven to 350. Using a 3” round cookie cutter, cut 36 rounds from your tortillas. Spread out and spray

with vegetable oil. Salt each round. Invert a muffin tin and insert a round, salted side up, in between 4 cups.

Curve the sides up to form a small bowl. Bake for 4-8 minutes, until slightly browned. Set aside.

In a medium pan, cook your ground turkey or beef. Add garlic and onion. Cook for 2-3 minutes. Add ¾ cup

water and taco seasonings. Set aside.

Set up a station with your toppings in small bowls. This will make it easier to fill each cup. Beginning with your

meat, spoon a small amount into each cup. Next add your corn, black beans, peppers, tomatoes and avocado.

Serve and enjoy!
