I’ve always loved maraschino cherries.

As a kid in my Shirley Temples, as an adult in my Cocktails, and they’re front and center in my awesome cute pink cherry cookies!!

Soft, buttery, pink cookies with the surprise of a juicy, sweet maraschino cherry in the middle that also helps keep the cookies moist. The cherry juice glaze boosts the cherry flavor even more.

I also like to add a little variety when decorating them.  I like to dip a few , I like to drizzle a few and I like to dip and sprinkle some.  For goodness sake have fun with it.  Cookies are all about fun.  These cookies freeze well for your holiday party.  Just store them in airtight containers with wax paper between the layers and they will be good for about 2 months!

These little cookies are really too simple to mix together-it’s a basic recipe with a little added boost of maraschino cherries in the batter with some cream cheese.  I think the addition of mini chocolate chips to the mix might be on the list for next time.

Need I say more? no not really but I will… Cherry and Coconut Yes Yes & Yes! These are so fun and easy to make and will be your new go to summer treat. By now you know I love easy and unique. Have fun with this enjoy!

What You Need:

3/4 cup all purpose flour
6 cups shredded sweetened coconut
1 Tablespoon vanilla extract
1 teaspoon almond extract
1 (14 oz) can sweetened condensed milk
1 cup Wilton Royal blue chocolate melts
1 jar maraschino cherries – drained and patted dry

How To Create:

1.  Preheat oven to 350°. Line a cookie sheet with parchment paper and set aside.
2.  In a large mixing bowl, add the flour and coconut. Stir until well mixed.
3.  Add both extracts and stir again until well blended.
4.  Add the sweetened condensed milk and with a rubber spatula, mix well to incorporate.
5.  Drop 2 inch rounded, heaping spoonfuls onto the cookie sheet, spacing the cookies about 2 inches apart.
6.  Spray the bottom of a drinking glass with non stick spray and use it to flatten the cookies ever so slightly.
7.  Bake for 12-15 minutes or until golden in color and the coconut is lightly toasted.
8.  Cool on the cookie sheet for 5 minutes before transferring to a wire rack to completely cool.
9.  Line a cookie sheet with wax paper and set aside.
9.  In a double boiler, melt the blue chocolate candies by stirring until completely melted.
10.  Pour the melted chocolate into a shallow dish and dip the bottom of each cookie into the mixture. Place on the cookie sheet to allow the chocolate to harden.
11.  Using your index finger, gently press down into the center of each cookie. Dab a small amount of melted chocolate onto the bottom of each cherry and place into the hallowed center.

What You Need:

Rice Krispy’s

Icing

Butter

Cherry’s

Marshmallows

How To:

Time: 30 Minutes

Serves: 24 Mini Sandwiches

• 3 tbsp. Butter
• 4 cups Marshmallows Minis
• 6 cups Rice Krispies cereal
• Wilton Pink Decorating icing (round and star tip included)
• 24 Cherries

Tools

• Wilton 12-Cavity Mini Doughnut Pan

1. Melt butter on low heat in large stovetop pot.
2. Slowly stir in marshmallows until evenly combined.
3. Remove from heat.
4. Slowly stir in rice krispies until evenly coated with marshmallow mixture.
5. Fill each doughnut mold (approximately 24) to the top with rice krispies mixture. Ensure there is no hole. Press down firmly.
6. Using the remaining rice krispies mixture, press firmly onto a lined or sprayed baking sheet until you have a thin layer.
7. After allowing to set for at least 10 minutes, remove bundt cake shaped rice krispies from doughnut mold. Use one as a sample size, cutting singular circles from the thin layer of rice krispies (regular kitchen knife will do). You will need approximately 24.
8. Pair one bundt cake to each circle. Add swirl of pink frosting (store bought used here) to each circle. Place bundt cake shape on top.
9. Garnish each rice krispies sandwich with a cherry.
