Juicy, delicious roasted tomatoes topped with shredded Parmesan cheese. So easy to make!
There’s so many things I love about summer, and summer tomatoes are high on that list. For this recipe, the sweeter the tomatoes the better. And the one that come straight out of my garden are the best!
As a tomato and basil sandwich, of course! The classic summer Southern summer sandwich … tomatoes on white bread with a generous slathering of mayonnaise … gets even tastier {if that’s truly possible} with the addition of a bit of fresh basil. There’s not much better. This is the normal Georgia way!
Easy peasy, just slice the tomatoes, top with a little pesto and shredded parmesan cheese and bake in the oven. This would be yummy with Asiago or mozzarella as well. Serve them as a side with grilled chicken or fish, or even a simple pasta with garlic and oil.
Sometimes, I slice the tomatoes in four thick slices instead and that’s the way my husband likes it the best!
Want a little more flavor? I always dip mine in a awesome pesto sauce and it really wakes up all the taste buds so good!!
Ingredients
- 5 Fresh Tomatoes, sliced ¼ inch thick
- 1 cup Fresh Basil, chopped
- ½ cup Mozzarella Cheese, sliced thinly
- ¼ cup Extra Virgin Olive Oil
Instructions
- Preheat oven at 350 degrees F.
- Line baking pan with foil and brush lightly with extra virgin olive oil.
- Place tomato slices onto baking pan. Brush tomatoes lightly with extra virgin olive oil.
- Assemble basil and cheese onto tomatoes.
- Place into oven for 4 to 5 minutes or until cheese has melted.
- Arrange on a serving board, garnish with fresh basil on the sides.
- ENJOY!
