Carrot Cake With Cream Cheese Frosting

Carrot Cake

I absolutely love carrot cake !!! I always make my mom make it for me any chance I get. But look a here I made my own and it was so good I cant stand it I even took a piece to my mom for her taste test she approved. This is the perfect cake with the perfect icing !

What You Need:

1/3 Cup oil
1 Cup sugar
2 Eggs
1 Tsp vanilla
1 Tsp baking powder
2 Tsp cinnamon
1 Tsp nutmeg
1 Cup grated carrots
3/4 Cup flour
Optional: 1/4 Cup chopped walnuts
 

Cream Cheese Frosting Ingredients:

 
3/4 Cup butter
2 1/2 Cup confectioners sugar
2 Tsp vanilla extract
1/2 Cup cream cheese frosting

How To Create:

Preheat the oven to 350 degrees. Grease and flour a cake pan.
In a bowl mix the oil, sugar, vanilla and eggs.
Add in the baking powder, nutmeg cinnamon, carrots and walnuts mixing well.
Slowly add the flour and continue mixing until everything is well incorporated.
Pour the batter into the prepared cake pan and take to the oven.
Bake for 30 minutes or until done.
Remove from the oven and from the cake pan and let it cool down completely before frosting.
 

Cream Cheese Frosting Directions:

 
In a bowl place the butter, cream cheese and vanilla and mix for 1 minute.
Slowly add in the confectioners sugar and continue whipping for 4 minutes or until light and fluffy.
