What You Need to Make this Coffee Cupcakes Recipe
And, you know, if you’re not much of a baker (yet), you’re going to find that these cupcakes are the EASIEST cupcakes ever. So simple, you don’t even have to crack an egg.

- Cupcakes
- 2 1/2 cup flour
- 1 cup granulated sugar
- 1 tspn baking soda
- 1/2 tspn salt
- 1/2 cup cocoa powder
- 2 tspn vanilla
- 1 cup water
- 1 can of your favorite vanilla frosting
- Ganache
- 1/2 cup coffee grounds
- 1/2 cup chocolate chips
- 1/2 cup heavy whipping cream (or coconut cream, which is what I used)
How to Make this Latte Cupcakes Recipe
Step 1
To make the cupcakes, preheat oven to 350-degrees, then combine dry ingredients in a medium sized bowl.
Step 2
Combine wet ingredients (including butter) in a second medium sized bowl.
Step 3
Add dry ingredients to wet ingredients in ⅓ increments, mixing thoroughly between each increment. Then spoon into lined cupcake pan.
Step 4
Bake for 30-minutes or until inserted toothpick comes out clean. Cool cupcakes completely before decorating.
Step 5
With your largest decorating tip, press into the top of the cupcake off-center, creating a well. Save hole tops.
Step 6
Melt chocolate chips in a microwave safe bowl by microwaving them in 30-second increments, stirring between, until completely melted.
Step 7
Place 1/4 cup coffee grounds and heavy whipping cream into the chocolate then stir, forming a coffee-chocolate ganache.
Step 8
Place 1 tablespoon coffee-chocolate ganache into each cupcake well.
Step 9
Replace hole top on each cupcake then place star tip in a piping bag.
Step 10
Place 1 tablespoon ganache messily on one side of the piping bag. Place icing in the remaining area of the piping bag. Then frost each cupcake in a swirl, turning the piping bag as you pipe.
Step 11
Sprinkle with additional coffee grounds.
