When the kids asked for a campfire (in the backyard) and S’mores Cupcakes using those big puppy eyes, who was I to refuse? They’re just so cute–the cupcakes AND the kids.
It’s not every evening that we have a little fire in our backyard fire pit. But, sometimes, on those awesome spring evenings, well, it’s just nice to step out there.
But, my kids have been doing this new thing–they want multiple marshmallows toasted at the same time.
I had to get creative to do this, y’all.
And, the trick is: I don’t actually do it on the campfire.
I just let the kids make the S’mores Cupcakes and then I toast the marshmallows after they’re on the cupcakes with the fire-starter we use for the fire pit.
Why we have to eat them by the fire pit is neither here nor there–except that, after making and eating these smores cupcakes, my kids are ridiculously messy.
So there’s that.
What You Need to Make this S’mores Cupcakes Recipe
- Vanilla Cupcakes
- 2 1/2 cup flour
- 1 cup granulated sugar
- 1 tspn baking soda
- 1/2 tspn salt
- 1 tspn vinegar
- 2 tspn vanilla
- 1/3 cup butter
- 1 cup water
- 1 cup mini-chocolate chips
- 1 1/2 cup mini-marshmallows
- 1 can of your favorite vanilla frosting
- 3 graham crackers
If you don’t want to make cupcakes, you can always just start with some plain vanilla cupcakes from your local grocer.
They don’t mind at all if you call in and ask them for an order of plain cupcakes with no icing.
How to Make these S’mores Cupcakes
Step 1
To make the cupcakes, preheat oven to 350-degrees. Combine dry ingredients in a medium sized bowl. Combine wet ingredients (including butter) in a second medium sized bowl. Add dry ingredients to wet ingredients in ⅓ increments, mixing thoroughly between each increment. Spoon into lined cupcake pan. Bake for 30-minutes or until a toothpick comes out clean.
Cool cupcakes completely before decorating. No jokes, warm icing is messy icing.
Step 2
Place the chocolate chips into a small microwave-safe bowl. Microwave for 30-second increments, stirring between, until completely melted.
Step 3
Using a large decorating tip, make a hole in the top of each cupcake. You know you want to eat that little bit of cupcake–do it, you’re using a marshmallow for the top anyway.
Step 4
Place 1 tablespoon of the melted chocolate in each cupcake hole.
Step 5
Place a marshmallow in each cupcake hole. Yeah you read that right.
Step 6
Then fill a decorating bag with the frosting and frost the cupcakes in a circular fashion in a single layer.
Step 7
Drizzle melted chocolate over the top of each frosted cupcake.
Step 8
Place mini-marshmallows over the top of each cupcake.
Step 9
Toast the marshmallows and add 1/4 of a graham cracker to each cupcake.
Step 10
