Mini Coconut Donuts

These are so fun and cute !!! Ya’ll know by now I love cute food !! Who would have thought it would be so easy to make these at home !!! My mom always made these now it’s my turn. I love creating fun treats and hope you enjoy ! I try to show and explain everything but if you ever have questions please ask.

Blackbird

What You Need:

¼ tbsp baking soda

½ tsp baking powder

1 cup flour

1/3 cup sugar

1/8 tsp ground nutmeg

1/3 tsp salt

1/3 cup Coconut Flakes

¼ cup greek yogurt

1 tsp vinegar

1/3 cup heavy whipping cream

1 egg

1 tbsp butter

1 tsp vanilla extract

2 cups powdered sugar

¼ cup hot water

1 drop green food coloring

12-Cavity Mini Doughnut Pan

Piping Bag & Tip

How To Create:

1.Preheat oven at 350 degrees F.

2.Mix baking soda, baking powder, flour, sugar, ground nutmeg, and salt into large mixing bowl.

3.Melt butter in small pan or microwave. Beat 1 egg in medium mixing bowl. Add greek yogurt, vinegar, heavy whipping cream, butter and vanilla extract to egg. Mix well.

4.Add egg mixture to dry ingredient mixture in large mixing bowl Add coconut flakes. Knead into dough until all ingredients are evenly distributed.

5.Scoop mixture into piping bag. Add batter to 12-count mini doughnut pan (non-stick), filling each doughnut halfway full.

6.Bake for 10 minutes.

    Yummy! I haven’t tried making out our donuts before but I am rather tempted to now that’s for sure.
    Coconut is my absolute favourite ingredient in a donut… on them, in them, it doesn’t matter as long as I can enjoy it!

    I love coconut anything. In fact I ate a bag of coconut flakes in the last week alone! I don’t have a donut pan but I think your recipe might come out good in a simple muffin pan!
