There are plenty of adorable St. Patrick’s Day cupcakes out there, but these shamrock cupcakes are perfect for anyone who wants all the fun with minimal effort.
Just a simple white cupcake topped with green frosting, a shamrock marshmallow, and a toy gold coin. So easy!

How to Make These Easy Shamrock Cupcakes
Because the goal here is simple, we’re starting with a boxed cake mix for the cupcakes. Feel free to use your own favorite vanilla cupcake recipe though if you don’t like boxed mix.
Ingredients
- Cupcake liners
- 1 box white cake mix + ingredients required to make the cupcakes
- 48 shamrock marshmallows (from a bag of Lucky Charms Marshmallows)
- 1 container white frosting
- Green gel food coloring
- Piping bag and decorating tip
- 24 plastic gold coins
Directions
Step 1
Preheat oven to temperature listed on the box. Line cupcake pans with cupcake liners.
Prepare the cake batter according to the directions on the box.
Step 2
Fill each cupcake liner 2/3 full with batter.
Step 3
Add one shamrock marshmallow to each cupcake liner on top of batter.
Step 4
Bake the cupcakes according to the package directions. Once baked, remove from the oven and set aside. Let them cool completely.
Step 5
While the cupcakes are cooling, prepare the frosting by mixing some of the green gel food coloring into the container of frosting. Add enough coloring to reach the hue you want.
Transfer the frosting to a piping bag and pipe the frosting onto each cupcake.
Step 6
Add one shamrock marshmallow and one toy gold coin to each cupcake.
That’s it! Your shamrock cupcakes are ready to eat.
Easy Shamrock Cupcakes
Ingredients
- Cupcake liners
- 1 box white cake mix + ingredients required to make the cupcakes
- 48 shamrock marshmallows (from a bag of Lucky Charms Marshmallows)
- 1 container white frosting
- Green gel food coloring
- Piping bag and decorating tip

Instructions
- Prepare cake mix according to package instructions. Line a muffin tin with different colored cupcake wrappers and
fill each wrapper 2/3 of the way full of cake batter. - Top each cupcake with one shamrock marshmallow and bake according to package instructions.
- Allow cupcakes to cool completely, then prepare icing by mixing gel food coloring with premade icing. Pipe the icing on top of each cupcake.
- Top each cupcake with one chocolate coin and one shamrock marshmallow.
