Easy Grinch Cookies – Grinch Christmas Cookies

Let’s get real, I love cookies. I love Christmas. And I LOVE the Grinch. I brought all three of these together in this easy Grinch Cookies recipe. You’re welcome.

The best part about these Grinch Christmas cookies? You don’t have to wait until Christmas to make them. They’re good anytime you want to have a Grinch movie night or just a fun snack.

And, if you have my permission not to share. Bahahaha!

In all seriousness, this recipe for Grinch iced Christmas cookies makes quite a bit of cookies, so there’s plenty to share. If you want to keep them all for yourself, that’s fine. But, theres more than enough–and they’re easy enough–to make for a class party or a cookie exchange party.

Meaning: there will be plenty of cookies to go around from this one batch to make sure that you get one, in addition to sharing with all your friends.

Even if those friends are just your dog with a single antler on his head. LOL!

What You Need to Make Easy Grinch Cookies

Now, I’m going to just lay out all my cards here right this second: I ran out of eggs.

Yep. Totally out of eggs and I needed to make these cookies–and I really didn’t want to pop out to the store YET AGAIN.

So, I decided to improvise and grabbed a can of garbanzo beans and a can of black beans–and strained them for their juice. Did you know you could use bean juice (aquafaba) as an egg replacement?

I did, because, frankly, I’ve run out of eggs before. But when I told my friend about it, she thought I’d grown two heads. So, I thought I’d mention it to you guys–this is real. It doesn’t change the way the cookies taste. And it works!

So, to make these accidentally vegan Christmas cookies, here’s what you’re going to need:

Cookies
1 cup coconut oil, room temperature
1 cup aquafaba, about 1/2 cup or 2 eggs (I ran out of eggs so I used bean juice)
1 cup sugar
1 1/2 tspn vanilla extract, clear
2 tspn baking powder
3 cups flour

While the cookies were something I’d made with aquafaba in the past, I had never made royal icing with it. But, again, it turned out magically perfect. So, here’s what you’re going to need to make this vegan cookie icing:

Icing
6 cups powdered sugar
1/2 cup aquafaba (or 2 egg whites)
1/2 tspn vanilla extract
Neon green food coloring
Yellow food coloring
Black gel decorating icing

And that’s it! Seriously.

How to Make this Grinch Christmas Cookies Recipe

Step 1

First, just preheat the oven to 350-degrees. Then cream your sugar and oil with your little hand mixer, then add aquafaba (or eggs–again, I was just out of them, and this recipe does work with eggs) and your vanilla extract, mixing thoroughly. Set aside.

Step 2

Whisk together the flour and baking powder in a second bowl. Combine with the sugar/butter mixture in 1/3 increments.

The cookie dough will be kind of crumbly, but turn it out onto parchment paper (parchment paper is important, so don’t skip this) and work with it as-is. You don’t need to dust the parchment paper with flour, the dough won’t stick to it.

Step 3

Roll the dough to about 1/4-inch thick, but do not work with the cookies any thinner than that as they’ll break too easily.

Step 4

In order to make your Grinch face shapes, take a pumpkin cookie cutter and squeeze the sides inward and pull bottom down a bit to make the Grinch’s long face.

With this new cookie cutter shape, cut out your cookies.

With the cookie dough you have leftover, form some thin bits to be sprigs of hair for the Grinch’s head.

Step 5

Do not move the cookies individually, but move the whole parchment paper sheet to the cookie sheet.

Bake the cookies in the oven for 10 minutes. They will not brown, but you don’t want them to. If they brown, they will not be soft in the middle. So, just pull them out at 10 minutes.

Leave the cookies on the parchment paper and transfer them to a rack, allowing the cookies to cool completely before you frost them.

Step 6

In order to make the icing, combine all of the icing ingredients in a small bowl and beat on low speed until smooth.

Set aside abut 6 tablespoons of icing in a secondary bowl.

Step 7

With the larger portion of icing, add 5-ish drops of neon green food coloring and 4-ish drops of green food coloring then stir it until the color is the green you want.

Step 8

With the smaller portion of icing, add 9-ish drop of yellow food coloring and stir it until the color is the yellow you want. Put this yellow icing in an airtight container and set aside.

Step 9

Place the green icing in a decorating bag with your smallest round tip.

Pipe an edge line all the way around the outer edge of each cookie and immediately fill it in, covering the Grinch’s whole face.

Allow this layer of icing to dry for 2-3 hours.

Step 10

With the yellow icing, pipe an outline of the eye shape (with a flat top angled downward) on each side of the face.

Allow this layer of icing to dry for 2-3 hours.

Step 11

With your black gel icing, add some bushy eyebrows, a couple of eyeballs and a top, messy eyelash to each Grinch face.

Then add a nose and long smile to each face.

Step 12

Around the holidays I’m always in the kitchen making and trying new creations. Well, my 7 & 3 year old beg to help and I normally don’t mind. But I finally found something that is just for them & this time they didn’t have to ask I asked them they were so excited!!! Told them it was a cooking day for them! I mean even if you’re not perfect with these they still come out super cute!!

These make the perfect holiday treat, but you could also use them for Birthday Parties, end of the School Year Party, Baby Shower, or you could make them in your favorite team colors for a Sports Party. The ideas are endless, and don’t limit yourself to Jolly Ranchers {of course, we love them} but any hard candy will work

These were so fun and turned out so well that we will be taking these to my daughter’s class and even some to the daycare! extra + they get to say they helped.

Sugar Cookie Pudding Cups

Happy getting closer to Friday friends! Its almost the weekend, which is always a reason to celebrate! These pudding sugar cookie cups are the perfect quick and easy dessert. They are great for a celebration or for any occasion because they are simple and delicious! You can create for any occasion these are Christmas themed.

Sugar cookies are so very versatile! Not only can they be basic rolled out dough, but the dough can be transformed into these cute little cups. Just waiting for the perfect filling. I chose some cute red and green fun!!

The cookie cups baked until just golden so they remain super soft, melt-in-your-mouth chewy.

These were a definite win in our house. The fun of making cookies with the kids, super cute, and not as much time spent on decorating them. Plus there’s still the fun of adding sprinkles & getting them EVERYWHERE!!

Seeing as how we’re exactly less than 2 weeks away from Christmas (crazy!!), I think it’s time that I start inundating you with holiday recipes. It is my favorite baking season after all! Boozy Snowballs

Some of my friends make chocolate rum balls every year for their holiday parties, and these sweet little bites are always the first things to go. Maybe that says more about my friends who always reach for the boozy treats first, but I can’t blame them.

These rum balls are as easy to make as they are to eat. They’re the best boozy no-bake treat!

This easy rum balls recipe will not disappoint. “A proper rum ball must be dense but moist, and ideally a little gooey. It must sing with booze but shouldn’t be too sweet,”

Something else to play around with: the choice of alcohol in your rum balls! Any rum will work, so use your favorite. (Malibu coconut rum is great if you also plan to coat your rum balls with shredded coconut.) You can even mix things up with tequila, bourbon, or whiskey!

Store your rum balls in the refrigerator. They become even better and more deeply infused with alcohol flavor after a few days.

Now go have yourself an adult snow fight!!

Peppermint Mocha Cupcakes

It’s beginning to look a lot like Christmas! OK not really it’s still high 50’s in Georgia, but my kitchen sure did smell like Christmas today

Supremely moist and decadent chocolate cupcakes topped with peppermint mocha frosting, a drizzle of chocolate, and crushed candy canes. ← Can you think of a sweeter way to kick off the holiday season?

I’ve had this cupcake idea up my sleeve for months. But I wanted to wait until after Thanksgiving to make them. After our belies are filled with turkey and when Christmas music is “allowed” to be played. I’m so excited because I have my kids on board they always say “Mom find a Christmas song or Christmas movie” I have successfully succeed in the kid department!!

How can one honestly resist? Just look at all of this chocolate! Peppermint mochas are a seasonal favorite, but the combination of chocolate, mint, and coffee is on my mind all year long.

However, there is just something about this delectable combination of flavors when the snow is falling, family is playing, & presents are hiding in the closets. Nothing compares to sipping on a warm coffee drinks during Christmas time. Unless, of course, you’re eating peppermint mocha in the form of a cupcake. NOTHING compares to that.

I’m a huge fan of “Christmas flavors”. You know… the ones we look forward to indulging in all year long. Like eggnog, gingerbread, cranberry, snickerdoodle, pumpkin, and of course, peppermint mocha.

Even as an adult, I still love candy canes. I especially like to crush them up and use them to sprinkle on cookies, cupcakes and So Delicious ice cream. Oh yes, a frozen peppermint treat! so have fun with the extra!!!!

Holiday’s With Crown & Ivy

Ya’ll small town living is amazing year round but even more so at the holidays!! this past weekend we had our downtown area set up with a ice skating rink, Santa, horse & carriage rides complete with Christmas carols. Yes, they do this type of thing all over but here it’s a lifestyle we know everyone we see and if we don’t we will.

We let the kids play and run off without to much worry we know someone is keeping an eye on them even if they go a little to far!

Of course when I go to anything around town I want to look good what mom of two kids doesn’t? And I’m lucky enough to have a Belk a few miles away where I buy all my Crown & Ivy items and 90% of my closet is this brand… I can look dressed up and preppy but also be comfortable in the process.

The different mix and match pieces from Crown & Ivy are perfect no matter where you go! and can be changed up a ton of different ways.

My two picks this week are: First the best button up ever so soft and looks so typical until you see the back every time I have it own people stop to ask me where I found it. Put it on with a scarf or under a vest. Second the navy and white light vest is dead on to add that extra touch and it’s not un-comfy it’s perfect weight and goes with EVERYTHING! Both can go with jeans or leggings!

The outfit I picked out is definitely southern preppy style!

Pinteresting Trees VS. Our Tree.

Everybody says I’m the opposite of OCD and normally that works out pretty well for me. I mean life is way to short to fold socks and worry about the dishes being lined up. Right ? Just kidding if your that way that’s okay my best friend is.

But it does come in handy when your kids want to be in total control of the Christmas tree ! In the years past I have never let them I always bought matching ornaments and placed where I wanted them and kinda let the kids hand them to me to hang etc…

I absolutely have a crafty heart and mind and would love a perfect matchy matchy tree but you know what when they are moved out and gone I have all the time to do that.

So my two little elf’s Jack (2) & Ca’Rin (5) handled it perfectly. And I enjoyed every second of sitting on the couch watching them.

This was the star of them wanting to be in charge.

They even got the stool out so cute !!

We painted and designed some ornaments as well they did so good they turned out cute !

Not bad right ?? I didn’t touch it !! It’s okay we have a half and half tree with a few holes… They were so excited they are still telling people and talking about it !! May be a new trend 1/2 red 1/2 black and dark brown. I’m very proud.

Now don’t get me wrong a girl can daydream right ? When my two tiny humans finally put me back in charge these amazing over the top Pinteresting tress will definitely be my inspiration. Take a look below.

Who wouldn’t love a purple peacock inspired tree !! So unique and fun. Not sure why the whole house matches but hey I would definitely have that tree.

Something about this rainbow tree just pulled me in immediately. Very festive and makes me feel all cozy… This will be in my house one day.

This is definitely my style and normally the route I would go I love the ribbon that says happy hoildays !

Happy Holidays !!! I don’t know about ya’ll but the holidays are some of the best days ever ! I have little ones so of course the most fun is watching them wake up and see everything Santa left ! Okay, by now everyone knows I’m 100% gypsy at heart and these feed my soul like no other ! These custom made DreamCatchers and mobiles are literally the most detailed ones I have ever seen. Getting a stuffed animal mobile for over the crib is so 1970’s. Give people something to talk about when you add a piece from Tays ! I keep mine in the living room cause I want it to be seen.

Just look !! These felt flowers are the REAL thing ! Not some crafter DIY’er trying for the first time like me lol. A few months ago I got into essential oils and from then on I have really enjoyed them ! in my bath is where I use them the most and I most recently bought a diffuser.
