Thai Coleslaw

Thai Coleslaw! A rainbow of crunchy vegetables drizzled with a Thai-inspired dressing!

You will love this coleslaw it has an amazing twist…What You Need:

How To Create:

Homemade Peanut Satay Sauce:

~½ tablespoon peanut oil
~1 clove garlic
~1 small onion
~1 teaspoon dried chilli flakes
~1 tablespoon brown sugar
~1 teaspoon soy sauce
~2 tablespoons crunchy peanut butter
~1 can coconut milk
Heat all ingredients together over medium heat in a small sauce pan until completely combined.

Mix equal parts peanut satay sauce and mayonnaise to make thai coleslaw dressing. (1/3 cup of each)

Julienne 4 cups of vegetables – I used:
~1 cucumber
~2 carrots
~3 radishes (or daikon)
~1 red pepper
Mix vegetables and peanut-mayo sauce.
For best results, allow to chill in fridge overnight.
