Bruschetta Chicken

This is THE perfect meal for a warm day. Grab a bottle of wine make this amazing creation and eat out on the deck tonight. We live in Georgia so I stay outside 80% of the time on the back porch where I have made a mini paradise and these kind of recipes make it even better !

Bruschetta

Right now is the perfect time to get all the ingredient’s for this everything is fresh and new and if you can get farm grown even better! That is one pro of living in a tiny town we have the best!

What You Need:

6 Chicken Thighs, skin removed, de-boned

6 Baguette slices (cut on a the bias/diagonal)

1 Tomato, chopped

½ Onion, diced

½ C Parmesan cheese

¼C  + 2 tbsp Balsamic Vinegar

¼ C Olive Oil

1 tsp Basil, dried (or 2 tbsp. fresh)

2 cloves Garlic, finely chopped

How To Create:

In a bowl, mix together the ¼ C balsamic vinegar and the olive oil. Season with a dash of salt and pepper.

Transfer mixture to a leak proof container or a Ziplock bag. Add the chicken pieces. Marinate for a

minimum of 1 hour or maximum overnight.

On a parchment lined baking sheet, bake the chicken thighs at 350 for 40 – 45 minutes.

In another bowl, combine the tomatoes, onion, garlic, ¼ C parmesan cheese, basil, and 2 tbsp. of

balsamic vinegar.

Toast the baguette slices.

Arrange the slices on a parchment lined baking dish

Top each with a chicken thigh.

Top each chicken thigh with the tomato onion mixture

Top each thigh with a sprinkling of parmesan cheese

Bake in the 350 oven for approximately 10 minutes or until the cheese melts and lightly browns.

    Being Italian, I have always LOVED bruschetta but wanted more food out of it. Does that make sense?! Haha. Adding chicken is the perfect way to do that! SO smart and your photos look AMAZING.
