Frittata The Easy Way

 I made this simple asparagus, bacon & tomato frittata recipe a few weeks ago, and I’m just now getting the chance to share it. Brunch is my absolute favorite meal invited. Especially on the weekends this family does brunch not breakfast we tend to be a bit lazy we are a cuddling family. This special treat will satisfy the whole family and wow any quest that you may have. No one said you had to tell them how easy it is to create this goodness !

What You Need:

6 Eggs

4 rashers Bacon, cooked

1 C Asparagus, diced

5 Cherry tomatoes, or 1 large regular tomato, diced

1 tsp Garlic, minced

1 tsp Italian mixed herbs (or more if you’d prefer)

¼ Onion, small, diced

dash, pepper and salt

How To Create:

Line and spray the slow cooker pot with parchment paper, and spray with cooking spray

Combine all the eggs in a bowl, and whisk together well. Add the seasoning/spices.

Pour into the slow cooker bowl.

Sprinkle over the egg mixture, the bacon, asparagus, onion, and lastly, the tomatoes.

Cook on high for 2 – 2.5 hours.

Lift the frittata by the parchment paper and remove from bowl. Let sit to cool slightly before cutting and

serving.

Enjoy!

    I will definitely miss frittatas once I complete my vegan transition…I need to find a good replacement so I can continue making them! I love the combination of the flavors you have in this one! That’s the great thing about a frittata…you can pretty much add whatever you want:)

    I don’t care for eggs, but I’m betting I could enjoy this dish. Is a frittata similar to a quiche? I remember trying a bacon and cheese quiche years ago and being so surprised that I liked it, considering the fact that I don’t like eggs.
