Loaded Baked Potato Chip Dip

I love a good loaded baked potato. So when I spotted this recipe for loaded baked potato dip, I knew it was going to be fabulous. I was not disappointed! What’s not to love about warm waffle fries or chips dipped in a savory mixture of sour cream, cheese and bacon?

You’ll want to serve this dip at room temperature–my kids like it best warmed up a little–so whatever you prefer is fine. You’ll want your waffle fries to be nice and crispy–they’ll work much better for dipping that way. And if you do have any leftovers, this really does make a great topping for baked potatoes.

This loaded baked potato dip combines all of the fantastic flavors of a classic loaded baked potato – sour cream, bacon, cheese and scallions. Scoop away with potato chips!

Forever, the only way I ever made a baked potato was in the microwave. I just can’t argue with quick and easy, right?

Well, once I started baking them in the oven, there was no turning back for me – baked potato perfection! I typically keep it fairly simple when I have baked potatoes and usually top them with butter, salt and a lot of pepper.

However, there really is nothing better than a loaded baked potato when you’re feeling the urge to splurge. A steaming hot baked potato topped with mounds of sour cream, bacon, cheese, and chives.

This is heaven for most of us carbaholics (and cheese and bacon fanatics) – so much goodness!

I’ve made this countless times over the last handful of years and each and every time it’s met with oooh’s and ahhh’s. When people ask what’s in it, no one can believe how simple it is to make. Keep this recipe on hand for an easy party dip – it’s great for everything from the Super Bowl to a party!

How to Make Loaded Baked Potato Chip Dip

This dip is so easy to put together, you’re going to be making it ALL THE TIME.

Ingredients Needed

First, gather up the following ingredients:

2 cups sour cream
2 cups shredded cheddar cheese
3-4 green onions, sliced (+1 for garnish)
2 teaspoons hot sauce
10 slices of bacon, cooked crisp and crumbled
Salt & pepper to taste
Chips or fries to dip

Directions

To make the dip, first add the sour cream, cheese, green onions and bacon in a bowl. Make sure you set aside some of the green onions and bacon crumbles to use for garnish later.

Stir everything together to combine.

Next, cover the dip with plastic wrap and pop it in the fridge for an hour to let all the flavors combine.

When you’re ready to serve, transfer to a serving bowl and garnish with sliced green onions and crumbled bacon. Serve with chips or fries.

To get the true loaded baked potato experience, serve the dip slightly warm. I like to pop it in the microwave for 30-40 seconds and give it a good stir to even out the temperature.

I like any kind of dip year round and we have snack days all the time at the office and I’m know as the “dip queen” It’s always a hit!

Loaded Baked Potato Chip Dip

Ingredients

2 cups sour cream
2 cups cheddar cheese, shredded
3-4 green onions, sliced
2 teaspoons hot sauce
10 slices bacon, cooked crisp
Salt & Pepper to taste
Chips or Fries to dip

Instructions

In a medium bowl, mix together the sour cream, cheese, 3/4 of the sliced green onions and hot sauce.
Crumble 8 slices of the bacon and stir into the sour cream mixture. Season with salt & pepper.
Refrigerate for at least one hour before serving garnish with remaining bacon and green onions..
Serve at room temp or a bit warm.

Sherbert Cupcakes

Not only do these cupcakes look like rainbow sherbet, they taste exactly like it!

I don’t think I’ll ever get bored of making cupcakes. And I think they’ll always be a big hit at parties. Especially considering you really can flavor them and decorate them in an infinite number of ways.

One dessert that I don’t think gets enough credit is sherbet. It seriously gets the short end of the stick and I’m pretty sure people should start paying it more attention. I mean what looks that pretty and taste that amazing!!

The fruity flavor of it and the colors make these Rainbow Sherbet Cupcakes seem like the perfect summer cupcake. This is a cupcake perfect for adults and the kids.

I also believe good desserts like these cupcakes deserved to be shared! (& if I don’t get them out of my house soon, I’ll eat them all!!).

Basil & Tomato Melts

Juicy, delicious roasted tomatoes topped with shredded Parmesan cheese. So easy to make!
There’s so many things I love about summer, and summer tomatoes are high on that list. For this recipe, the sweeter the tomatoes the better. And the one that come straight out of my garden are the best!

Or another favorite way to enjoy tomato and basil deliciousness?
As a tomato and basil sandwich, of course! The classic summer Southern summer sandwich … tomatoes on white bread with a generous slathering of mayonnaise … gets even tastier {if that’s truly possible} with the addition of a bit of fresh basil. There’s not much better. This is the normal Georgia way!

Easy peasy, just slice the tomatoes, top with a little pesto and shredded parmesan cheese and bake in the oven. This would be yummy with Asiago or mozzarella as well. Serve them as a side with grilled chicken or fish, or even a simple pasta with garlic and oil.
Sometimes, I slice the tomatoes in four thick slices instead and that’s the way my husband likes it the best!

Want a little more flavor? I always dip mine in a awesome pesto sauce and it really wakes up all the taste buds so good!!

Show Your True Colors:

Now by the time my kids were sitting up I started teaching colors everything they grabbed, wanted, and looked at I would talk to them and them what color and what it was. So yes I know for a fact my kids know the difference from white and colored so yes it’s perfect they sort ALL laundry into colors & whites and they actually feel accomplished.

Pets Get Hungry To:

We live on a good bit of land in Georgia and would consider it a farm type setting we have dogs, chickens, horses and a few wild goats and this is also a job for both kids every evening. My husband of course helps but they have to go feed/water every animal before dinner. Cause pets get hungry to.

Scrub Scrub:

Yes, I have a dishwasher but 80% of the time I will wash the dinner dishes the same night and go ahead and put them up this is perfect for my kiddos I wash one dries & one put them away we have stools to reach all cabinets in our kitchen. We make it fun sometimes we are silly and we race to see how fast we can go!

Let Them Eat:

Now, I love to cook and I do so a lot but… when it’s not dinner time I have tons of things they can make and get all by themselves fruit, easy mac, and lately the 100% favorite item has been the new Tiny Toast Blueberry Cereal my oldest makes hers with milk and my youngest loves to eat it plain and dry it’s so good !!! every bite has fruit flavor and it’s actually wayyyyy better for them than most kid approved loved items. Only 9 grams of sugar, no high-fructose corn syrup, no artificial color or flavor I love it as much as they do! and I honestly don’t mind when they eat to much of it! This is by far what they pick every time for a get myself item! And the fact it’s a new item excites them!

Pineapple Woopie Pies

I’ve been wanting to make whoopie pies for a while now, as evident by one of my Pinterest boards.

I told you this whole Pinterest thing would be a problem. Anyway, I thought…”hmmmm, let me try might be easier that I think!” And guess what?

…… It was!

My kids enjoyed them, so they are definitely kiddo approved!

This is the best combo for a woopie pie the cake mix made it close to perfection! The perfect amount of fluffiness! and taste.

Chocolate Coconut Cookies

I’m always on the lookout for a cookie recipe that freezes well because let’s be honest, a frozen cookie after 10:00 p.m. at night is one of the best treats, like, ever. Every time I visit my mom, she has something in her freezer that we all know to go looking for!

I whipped up a batch of these chocolate chip coconut cookies just last night and they are gone!

Completely and utterly and sadly gone.

Next time I will make many extra so I can freeze a couple dozen for my snacking habits.

If you’re all about consistency in cookie size, then grab a cookie scoop. My favorite is a medium cookie scoop, but if you’re counting calories, you may want to go with a small cookie scoop.

Freezing cookies are defiantly one of my favorites and I was surprised with how awesome this one did!! Especially the coconut the texture was still perfect!

Strawberry Margarita Cupcakes W/ Tequila

For the past few days as I browsed the Internet hoping to find the inspiration for my new culinary adventures, I came across many recipes. I decided to make a summer day treat. It’s time to satisfy my own cravings! And this is the type of creation I love!!

I always find it very helpful to use paper cupcake liners. It makes for easy clean up, simple removal of the cupcakes from the pan

Sweet, salty, tart and yummy, all together. Sounds great to me! I poked holes to add the tequila made it super easy… you could omit if you like (or make with something other than tequila).

Blue Coconut Margarita

When it comes to cocktails, classics are some of my favorites However, I love to mix things up every once in awhile. And, if I can make something more colorful, then I’m on it!

It’s such a fun, unexpected take on a classic. I also like this addition because it helps to cut the taste of the tequila. Despite its blue hue, the curaçao has a orange-like flavor that works really well in a margarita.

Summer Fruit Bruschetta.

I live in Georgia so winter is not to bad here but, I stay ready for hot weather. Summertime in GA is spent out doors we basically live on the deck and around the pool.

Lighter fare, fresh colors and flavors, is what I love most about summer recipes and this is easy and will have people going crazy for it!
